1 Pint Heavy Cream

3/4 cup sugar

1/2 Cup Lemon Juice

In a large saucepan, heat the whipping cream and sugar over medium-high until it starts to boil.

Once it's boiling, reduce the heat to medium-low and cook another 5-8 minutes making sure the cream doesn't boil over.

Once the cream has thickened a bit and started to turn slightly golden yellow, remove from heat.

Stir in the lemon juice.

Let posset cool for about 15 -20 minutes.

Pour into hollowed-out lemon rinds or ramekins and let chill in the fridge for at least 4 hours or overnight. Garnish with mint and lemon zest.
